Hitozanaza (EC 3.2.1.132, Chitosanase) je enzim sa sistematskim imenom hitozan N-acetilglukozaminohidrolaza.[1][2][3][4] Ovaj enzim katalizuje sledeću hemijsku reakciju
- Endohidroliza beta-(1->4)-veza između D-glukozaminskih ostataka u parcijalno acetilisanom hitozanu
Pozant je čitav spektar hitozanaza.
