Protein-glutamatna metilsteraza (EC 3.1.1.61, metilsteraza specifična za hemotaksu, metil prihvatajući hemotaksni protein metil-esteraza, CheB metilsteraza, metilsteraza CheB, protein metil-esteraza, protein karboksil metilsteraza, PME, protein metilsteraza, protein-L-glutamat-5-O-metil-estar acilhidrolaza) je enzim sa sistematskim imenom protein-L-glutamat-O5-metil-estar acilhidrolaza.[1][2] Ovaj enzim katalizuje sledeću hemijsku reakciju
- protein L-glutamat O5-metil estar + H2O protein L-glutamat + metanol
Ovaj enzim hidrolizuje produkte enzima EC 2.1.1.77 (protein-L-izoaspartat(D-aspartat) O-metiltransferaza), EC 2.1.1.78 (izoorientin 3'-O-metiltransferaza), EC 2.1.1.80 (protein-glutamat O-metiltransferaza) i EC 2.1.1.100 (protein-S-izoprenilcistein O-metiltransferaza).
