Oleatna hidrataza (EC 4.2.1.53, (R)-10-hidroksistearat 10-hidrolijaza) je enzim sa sistematskim imenom (R)-10-hidroksistearat 10-hidrolijaza (formira oleat).[1][2][3] Ovaj enzim katalizuje sledeću hemijsku reakciju
- (R)-10-hidroksistearat oleat + H2O
Ovaj enzim deluje na brojne 10-hidroksi kiseline.
