Galaktinol—saharoza galaktoziltransferaza (EC 2.4.1.82, 1-alfa-D-galaktozil-mio-inozitol:saharoza 6-alfa-D-galaktoziltransferaza, alfa-D-galaktozil-(1->3)-mio-inozitol:saharoza 6-alfa-D-galaktoziltransferaza, rafinoza sintaza, RafS) je enzim sa sistematskim imenom alfa-D-galaktozil-(1->3)-1D-mio-inozitol:saharoza 6-alfa-D-galaktoziltransferaza.[1][2] Ovaj enzim katalizuje sledeću hemijsku reakciju
- alfa-D-galaktozil-(1->3)-1D-mio-inozitol + saharoza mio-inozitol + rafinoza
4-Nitrofenil alfa-D-galaktopiranozid takođe može da deluje kao donor.
