Acil-(acil-nosilac-protein) desaturaza (EC 1.14.19.2, desaturaza stearil acilnog prenosnog proteina, stearil-ACP desaturaza, acil-(acil-nosilac-protein), vodonik-donor:kiseonik oksidoreduktaza) je enzim sa sistematskim imenom acil-(acil-nosilac protein),vodonik-donor:kiseonik oksidoreduktaza.[1][2] Ovaj enzim katalizuje sledeću hemijsku reakciju:
- stearoil-[acil-nosilac protein] + redukovani akceptor + O2 oleoil-[acil-nosilac protein] + akceptor + 2H2O
Enzim iz šafranike je specifičan za stearoil-[acil-nosilac protein]. Enzim iz Euglena deluje na derivate brojnih dugolančanih masnih kiselina.
