Levansaharaza (EC 2.4.1.10, saharoza 6-fruktoziltransferaza, beta-2,6-fruktoziltransferaza, beta-2,6-fruktan:D-glukoza 1-fruktoziltransferaza, saharoza:2,6-beta-D-fruktan 6-beta-D-fruktoziltransferaza, saharoza:(2->6)-beta-D-fruktan 6-beta-D-fruktoziltransferaza) je enzim sa sistematskim imenom saharoza:(6)-beta-D-fruktofuranosil-(2->)n alfa-D-glukopiranozid 6-beta-D-fruktosiltransferaza.[1][2][3][4] Ovaj enzim katalizuje sledeću hemijsku reakciju
- saharoza + [6)-beta-D-fruktofuranozil-(2->]n alfa-D-glukopiranozid D-glukoza + [6)-beta-D-fruktofuranozil-(2->]n+1 alfa-D-glukopiranozid
Neki drugi šećeri takođe mogu da deluju kao D-fruktozil akceptori.
