Glutamatna karboksipeptidaza (EC 3.4.17.11, karboksipeptidaza G, karboksipeptidaza G1, karboksipeptidaza G2, glutamilna karboksipeptidaza, N-pteroil-L-glutamat hidrolaza) je enzim.[1][2][3][4] Ovaj enzim katalizuje sledeću hemijsku reakciju
- Odvajanje C-terminalnih glutamatnih ostataka sa širokog opsega N-acilacovanih grupa, uključujući peptidil, aminoacil, benzoil, benziloksikarbonil, folil i pteroil grupe
Ovaj cinkov enzim proizvodi Pseudomonadaceae, Flavobakterija sp. i Acinetobacter sp.
