Dekstransaharaza (EC 2.4.1.5, saharoza 6-glukoziltransferaza, SGE, CEP, saharoza-1,6-alfa-glukan glukoziltransferaza, saharoza:1,6-alfa-D-glukan 6-alfa-D-glukoziltransferaza) je enzim sa sistematskim imenom saharoza:(1->6)-alfa-D-glukan 6-alfa-D-glukoziltransferaza.[1][2][3] Ovaj enzim katalizuje sledeću hemijsku reakciju
- saharoza + [(1->6)-alfa-D-glukozil]n D-fruktoza + [(1->6)-alfa-D-glukozil]n+1
